I am planning on taking a few days vacation next week.
I tried to bulk edit my listing to extend my handling time, but handling time no longer in the bulk edit list.
Am I missing something?

Just use Time Away with your listings still visible and can be purchased. eBay will automatically extend your handling time to match the time you are away.
No need to change the handling time and then change it again when you return. In addition you get the banner that alert buyers to the delay in shipping.

The screenshot you posted of the bulk edit screen shows you are using biz policies.
Pet peeve of mine that handling time is not a separate policy for easy updating, instead it's integrated into each shipping policy and to make bulk adjustments you have to update every single policy to change handling time.

eBay has this nasty habit of opting sellers in to features without asking or notifying them first. It appears that they have opted you in to business policies without your permission. Go to your account settings page. Then, under "Selling" click on "business policies" to go to the business policies manager page. Then, click on the "opt out" link near the upper right-hand side of the page. Once you have opted out, you should be able to bulk edit handling time again.

If you're using business policies, its an easy change. Simply edit each policy and change the handling time. Its done.

I just tested two items with the bulk edit drop down. The 'handling time' is there.
I'm using a desktop and on eBay.
