Although it appears that you can sort the Saved Searches list by name using a desktop browser, the sorting is actually done by keyword. Clicking on the "Search name" category heading will reverse the order of the sort.
Keywords that start with special characters sort first, then numbers, then alpha characters. Searches without keywords (such as an individual seller's items) sort last.
If you use the eBay app, you can sort your Saved Searches by Last Viewed, By Name or by Date Added.
