The listing catalog for computers seems out of date and it's causing the computers I have listed to be hard to find when someone uses the keywords because the model numbers are outdated and the latest processors (i.e. AMD Ryzen™ AI 9 ) aren't even in the catalog.

I thought they quit with the updating of catalogs a long time ago. I may be wrong.
I sell a lot of networking items and over the years, rarely ever found many from the catalog that had correct information or the correct category.
Always have entered the information myself.
Back in the day when eBay was pushing the catalog, sellers were used to input information.

That seems like a poor decision for technology-related items (them not updating the catalog anymore) because when I try to search for my item using the provided filters, they don’t show up, which is why I raised a flag on the issue. While I get you do have some buyers that search by name (i.e. cisco router) - you have an equal amount that may begin the search that way and then use the “provided filters” to narrow down the selection to what they’re really looking for and that’s where I feel this is a huge miss/fail.

The vast majority of the IT personnel and purchasing types searching for networking products are using specific part and model numbers for search. They know exactly what they are looking for.
Stick with entering your own pertinent information into the listings. Build it to fit your item perfectly. Stay away from AI.
