Don Pedro's Baked Mexican Salsa Chicken Boneless, skinless chicken breasts (one per person) crushed cornflakes chunky salsa Pam cooking spray Shredded Monterey Jack cheese Small portion of cooked linguini Spray Pam on the chicken and roll each breast in the corn flakes. Spray a baking dish well with Pam and places the coated chicken in the dish. Pour a thick covering of your favorite chunky salsa over the chicken. You can cover the dish at this point and refrigerate it for cooking later. Preheat oven to 350F. Cover the dish tightly with foil (shiny side down). Do Not use dish cover. Bake on bottom rack for 45 minutes. Uncover, spoon off excess liquid, if there is any, but be sure to leave enough for the linguini. Sprinkle the chicken with the shredded cheese, return to the oven, uncovered for 15 minutes or until the cheese is melted and browned a bit on top. Serve each breast with its sauce and cheese on a small bed of linguini with a small salad or green vegetable. If you are not concerned about a low fat meal, use butter in place of the Pam. Enjoy! I'm sorry I missed this opportunity the first time around. Marc, beside the heavy cast iron cooking pot we use frequently, is there another "Dutch Oven"? Grams used to hang hers from the crane in the fireplace. Many a good sauerbraten was cooked that way.....Yummy! B-) & :x PS: Want my recipe for stuffed shells? Either with seafood or sausage.....

Pete, Even though you're already old ( ]:) ) I feel it's only prudent to warn you, and the other guys on the group. As much as they produce WONDERFUL results, we (men) are NOT supposed to be cooking in cast iron pans. Iron has been linked to accelerated prostate problems! Dr. Marc

Pete, Well, there you go! (what ever that means!) Punk, Teflon is beyond worrying about! What EVER it is going to do to us, we are ALL gonna get it! I read some research wherein EVERY SINGLE person they tested had measurable amounts of teflon in their blood. From that I'm sure it's safe to say we ALL have it in out blood! I mean the stuff is E-V-E-R-Y-W-H-E-R-E! Pots and pans are just the very tip of the exposure ice-berg! ....And melting iron and EATING it are two different things! ;) Marc

What is wrong with cooking in cast iron pots? (seriously) I've never heard of a problem and we have two that we use occasionally. (fry pan & dutch oven) Thanks, Dot

Dot, They are made of iron and it has recently come to light that diets high in iron are BAD for (older) men's prostates! Some iron leeches from the pot or pan into the food during the cooking process. It has been recommended that men do NOT use iron cookware. I'm sure you could do a google search and get more detailed info. I'm not making it up. Marc
