Basically when I enter in the search box or sometimes before I have even typed it takes me to an American item.

That's because you're on ebay.com. Log out and return to your ebay.

At some point you went to ebay.com instead of ebay.com.uk, and now your browser autocomplete feature may be sending you to ebay.com each time you enter "ebay" into the search bar. Try clearing your browser history as well.

If you are using the eBay app, make sure you have set your country location correctly.
