I’ve updated my address in Ebay and PayPal but my shipping labels when I sell an item are still showing my old address. How can I change this?

The "Registration address" will not accept a PO Box, only street addresses. You probably will want to change the "Ship from address" which will accept either street or PO Box. HTH.
