I have sent a few messages asking to meet and do the local pick-up, yet no response!
What kind of hogwash is that? Obviously, I already paid and will bring a code to give the seller upon pickup, but I need them for an AutoCross event I am going to where I don't want to shred my current daily driver tires which I paid about $900.
Any ideas how to get a response? I am not going to threaten feedback or anything, but I have respectfully requested a call leaving my phone number. Is there a way to get the seller's contact information?

Did the seller offer local pickup in the listing?
Of course, being it is a holiday that may be the reason for the seller not getting back to you.

First you bought from a seller who has not sold anything before. That is why you should check the feeback profile of each seller you consider buying from. The seller not having sold before means eBay and/or PayPal is placing a hold on their payments, and the seller probably doesn't know about that.
Even if the hold was not in place the payment takes about 48 hours starting today, to switch from Pending to Completed, because payments have to clear through a Holland based company before being transferred to the seller, and other 2-3 days.
You do not need to pay in advance for Local Pickup items and I recommend not doing that at all. It is better to meet and make sure everything is as described, then to pay.
Since your seller probably does not know they their payment is on hold and you cannot send them the link below via ebay messages message them and tell them to do a Google search for:
"Payments on hold as a managed payment seller" which will take them to the link below
Also tell them to click on the link at the bottom of the above article titled "Payment holds on your sold items".
