Since things have changed on Ebay and not nearly as easy to do things as they used to be, how do I go about opening a case against a seller who hasn't sent an item I purchased a week ago? Seller is not responding to any emails and there's no tracking number provided either. I want to open a case about this seller and get my money back. Ideas?

1 day after the estimated delivery date, go in and file an item Not Received.
Go to the item in your purchases. Drop down menu and chose Item Not Received.

No need in messaging the seller... it's all automated. As @klhmdg suggests, you'll need to open an Item Not Received claim (at least) one day past the Estimated Delivery Date on the Order if you still haven't received the item by then.
Purchase History/Orders/More Actions/I didn't receive it
^^^ Do this at that time. Keep an eye on the case and ask eBay to step in when the timeframe allows, if needed.
