I am a fairly new seller. I didn't realize that Ebay penalized me for cancelled transactions due to my inventory being "out of stock". Due to being new and not understanding how everything works, I had to cancel 3 transactions already. I am now going to have to cancel another transaction due to "out of stock". Now that I realize that this is important and can affect my selling status, how can I cancel this latest order without getting another ding from Ebay?

There is no way.
Before you list any more items, you should re-read the User Agreement you signed here:

Yes, I suppose I should have. However, there is so much to read and learn that it was really overwhelming at the very beginning. I'm doing much better now but I'm still learning as I go.

Why are you8 listing items you don't have?
That is the obvious that you don't list items you cant deliver. It doesn't take reading ebay policy to figure out that.
