I buy my labels through eBay, so I don’t have the option to change the tracking in the app. But, try viewing the order in your sold items. Then at the bottom you should see manage shipping plus an arrow. Try clicking manage shipping to see if edit tracking is there. If not, try the arrow.
If you still can’t find it, use your browser to go to the website and change it there. On this page click edit tracking - https://www.ebay.com/mys/sold
I have used the browser on my phone to edit fields that can not be edited from the app. You just need to make the display large enough to find the right field, then it works fine.
