An acquaintance has had a GoFundMe page setup to help his family with the bills related his wife's cancer fight. 

I want to setup a series of auctions to give 100% directly to their fundraiser. I know about eBay has a way to donate to their listed charities where the seller is not charged fees on a sliding scale depending on how much is donated. 

Is there a way to use eBay charitable functions to sell in a way to donate to a specific GoFundMe?

No, unfortunately. The charity must be a registered non-profit charitable organization.
