My guess is not a lot, watermarking without actually dipping requires a very, very good scan to work from. AI is great for pulling lots of data in to come up with something, but if it's not working with enough detail, it won't do any better than the rest of us. Now, getting them to look up some obscure fact about a stamp or stamp series is much more likely. I used AI also this year to tweak my script for producing online exhibits from scans to web pages. I converted that script into one that works from scans of my album pages, resizes them as appropriate and crops all the individual stamps out using edge detection with my black mounts. The Czechoslovakia collection on my sites (https://billsey.seymourfamily.com) was done using just initial scans of the pages and the final script. It's not quite perfect, but it took me a *lot* less time than coding it myself.
Hate to break it to you, but using AI to make watermarking easier might not really help because eBay is using AI to remove your watermarks for Google and other external searches.
I don't think Ebay can actually remove stamp watermarks. Once a postage stamp is printed on watermarked paper, there is no way that I know of removing that watermark, besides what or why someone want to remove the watermked!
