Absolutely. I have done this a few times and refunded my buyer the difference or ate it when it was more. I always recheck due to some boxes being a bit bigger/smaller or the weight was miscalculated on my part.
Change weight after sold. I got it wrong? Want to change it before I print label?
Fine. Just note that you cannot charge the buyer any more for shipping than what they originally paid. Aside from that, yes, you must plug in the correct dimensions and weight before purchasing your label.
