Relist/sell similar and save as drafts instead of publishing.
Drafts expire after 75 days.
If you set a calendar alert to edit your drafts before they expire, they will remain another 75 days from the last edited date.
Photos will often disappear from old drafts so you'll want to have the photos saved on your system so you can re-upload them before you formally list next year.

Also, Christmas sells all year round. I keep my Christmas listed.
I am selling Christmas items every day, still. It will slow down, but I'll sell something every few weeks.
