eBay isn't set up for using escrow services (they did 20+ years ago). The closest thing they have to it would be the small number of Categories where eBay Authentication is available (Fine Art is not one of them).
If you're referring to eBay's escrow partnership [escrow.com], it is available only for the sale of motor vehicles and for watches priced at $10,000 (USD) or higher. Since you're in Canada, I don't know if there are any "cross border" issues involved i using the service.
