Wasting asked me the other day why we do not chat more about FOOD like we used to??
No clue, but as you know, I am ALL about PIE! Food in general interests me. LOL
Please share what is on the MENU, your FAV recipes, meal ideas and of course, PIX!
Tonight here was 2-meat lasagna and garlic bread. I cheated and did the Rao's frozen lasagna (it was great, btw) and GV frozen garlic breadsticks and it was the perfect comfort food for a COLD winter night.

Have Amish Chix in oven and will wotk on making a salad and those cheesy biscuits, like at Red Lobster.
We'll have some of the beef brisket for sammies later tonight/tomorrow.
Need to getbto Wally Wirkd and purchase Suet and seeds. Dem birdies are hangry!

I cheated and bought the box mix from Wally World - have made them before. I do drizzle them with really butter though, so not very healthy! 😉

·3 years agoAs it got up above freezing today I got burgers out on the grill tonight. Just plain, and not even on a bun. No GV buns last Wally trip, and too cheap to buy the other ones.

·3 years agoA burger sounds good right about now. I worked all day and into the night. Didn't stop to eat at all. Calling it quits now. Looking forward to breakfast tomorrow. Thinking omelette.

·3 years agoTonight was going to be burgers on the grill, and make some meat lumps for sauce tomorrow.
Temps altered that. I left my shoes on from when I went out with the ham bone, but as it refuses to get out of the low single digits until late this evening it was a bowl of hot soup instead. Soup got a folded up slice of processed cheese product. (the wife thinks it's Kraft, but actually I spilled some Wally into the package)
Will finish off with a slice of whipped choco cheesecake.

·3 years agoWell, it's been over a year since purchasing eggs and I have been have a inkling of egg salad sandwiches.
Purchased a dozen. Will be hard boiling all of them.
I use to make a big batch of egg salad for a few days, but I don't like when it gets "running".
What I do now is that I take 3-4 hard boil eggs,
Peel them
Throw them in a sandwich bag and take my hands to smash them.
Then add mayo' and seasoning into the bag and hand mix everything.
I don't dirty any bowls and there is enough egg salad for a few sandwiches with any running mayo' from sitting too long.
Then I take another 3-4 eggs and do the same a few days later . . .

When I make egg salad or potato salad/ham salad - I usually try and use in 4 days or so.
I use chopped/minced onion, minced celery, eggs, salt, pepper and sometimes green peppers.
I hard boil the eggs and separate the whites and egg yolks (cooked).
I use miracle whip, sweet pickle juice, sweet pickle relish and mash up the egg yolks and stir /blend all well.
Once the yolk mixture is blended well. I SQUIRT a tiny amount of yellow mustard in the mixture and stir. I then add the minced celery and minced onions (both raw, finely chopped) and salt/pepper to taste.
Each day to keep it creamy, well blended, I add a dollup of miracle whip to the egg salad and stir.
Love egg salad sammies on toasted pumpernickel bread. I slightly warm (not toast) the bread......YUM!

·3 years agoFor me, egg salad for sandwich spread needs to be "creamy".
For potato salad and egg salad has different items in it.
Ham salad spread is creamy with baby gerkins.
I do add mustard and dry mustard into the mix for both egg salad spread and potato salad.
I have a funny taste pallet where certain things have "no lumps".
Just a really odd way that I eat.
I haven't purchased pickles for a long time. I see a jar in my **bleep**, that is over 1 year past expiration date.
There are times that I have eggs 6 months + past expiration date.
I look at them that they are keeping the refrigerator company. 😄 😄
When I do spot the expired eggs, I will leave them in the yard and the crows pick them up.
I do have one egg that has been in my refrigerator of more than 10 years.
That light yellow egg is a gnu egg.
I use to get emu eggs for crafting.

And, mine takes 2 bowls. Lol
(I do keep left over sweet pickle juice in the fridge for these food excursions.....should probably figure out how old that might be! Lol)

·3 years ago@katzrul15 Oh no! I'm going to ask a basic question--did you strain the pasta before adding it to the mixture? I will take a look at the recipe later and see if I missed typing something. It's a standby in our house, so something is wrong, as I've made it many times.

Tried your spaghetti pie recipe. Musta done something wrong - turned out soupy and I used angel hair spaghetti, not penne pasta??

·3 years agoThere was a post on the selling board about price-gouging on pastina ... it made me go look up a recipe for pastina.
It sounded good, so I just made some. It was fantastic. A healthier take on mac-and-cheese.
I had about 1/4 cup of kamut orzo, so I used that instead of pastina. I think any kind of small pasta would work. This is about one serving of pasta, so I didn't make very much.
Boil some water in a small saucepan, stir in 1 teaspoon of chicken-broth-powder. Add the orzo, and boil until most of the liquid is gone (8-10 minutes). You can use broth instead, if you have some.
Meanwhile, grate some cheddar (and/or parmesan) cheese, and crack an egg into a small bowl and beat it a bit with a fork.
When the pasta is ready (don't drain it), turn off the heat, and stir the raw egg into it (the egg will cook from the heat of the pasta) and then stir the grated cheese in.
It's a bit like polenta with cheese, only made with pasta instead of cornmeal.

Yes, daughter is feeling much better. It seemed to be a 24 hour bug. Hubs got it. I feel like it is toying with me and will hit when I need to go to work on Monday! Speaking of work--hubby got a job! He is back in the working world of b&m rather than online, but it's income and insurance!
Planning on some baked chicken, mashed potatoes(from scratch), and veggies for dinner. I will have lima beans (my fave!), hubby and daughter love Brussels sprouts. I roast them in the oven tossed with olive oil, cranberries, and cashews.

·3 years agoGoing to be chops on the grill tonight. Got to get this grillin' done before parka & long johns temps roll in this week. Pulled the last container of homemade applesauce from the freezer. Undecided on the veggie, but maybe green beans.
Last night was salad, soup/crackers, and choco whipped cheesecake. (I sure do miss my turtle cream pie)
Would have had some hawaiian rolls to go with them, but as I posted somewhere, foolish me only bought 1 marked down package 😞

OP3 years agoTonight was baked chicken (recipe is called Amish Chicken) and it is baked on a bed of rice. We had fresh salad and for dessert, the new Philadelphia Cheesecake crumble. YUM!

Too bad there is fresh snow, otherwise I was eyeing the neighbors chicken coop. 😄 😄

Probably an assortment of 'whatever's in the fridge/freezer' roasted on a sheet pan with some great seasonings and served with wild rice.
Need to replenish stocks from the food store this weekend so until then it'll be whatever we can find.

The grocery store used to be my idea of fun shopping. Not so much with prices going through the roof, but still can think of many things that make less sense to spend money on.
Just wish I had appreciated food from the garden, etc. when I was a kid (back in the dark ages).

·3 years agoLast night was drag that sauce from last week (I think it was last week) out of the freezer, break up, and add that left over burger (some venison sausage in there but the wife turned her nose up at that) for the meat part, and boiled some angel hair to be covered with that sauce.
Was preceded by a tossed garden salad (been out of salad for days) secured on my trip to town for medication. I finished with a couple of "chunky chippers" from Wally. Wife had "berry whipped cheesecake" pie, and watched "Elvis" on the "dish".
Day before, if memory serves ( sometimes it doesn't. one day is just like the next) was "marinating" steak in the slo-cooker along with some white potatoes, and baby cut carrots. McCormick slow cooker seasoning packet added to the mix to keep me from grabbing everything from the cupboard to add to it. Also yellow onions, but they were nuked. Don't care for the taste when they are in the cooker.
Night before, I had leftover chick noodle soup, chicken thigh, and and half a nuked onion that had been done with a little salt, olive oil, and steak seasoning.
Tonight it looks like hot dogs, or smoked sausage on the grill, with some grill singed buns, or perhaps finish that slo-cooker meat. The left over juice will go in the freezer to be added to the next one. Pulled some chops from the freezer. They will grill up by the end of the week. Looker for a pork loin for the oven, but did not spot one in the freezer. Maybe just need to did a bit deeper.
Trip to town also produced some fresh broccoli crowns. The wife will do them to mix with some angel hair pasta, and olive oil. Almost snagged a whole ready made hot roasted chicken but my judgement was shaded by the fact that it was a "coupon sale" item last week, and purchasing now I would not get that savings,and passed. That, and it was only noon-time. Poor judgement on my part. That would have made a nice dinner, and a mayo slathered chicky bird sandwich for today.

·3 years agoWith the wind, and snow/sleet the grill was a pass tonight.
Topped my meal off with a bit of this "chocolate whipped cheesecake". Cut it for 8 servings, but was a piggy, and had 2 pieces. Not as good as the "turtle cream pie", but I forced it down.

·3 years agoSteamed (snow) Crab Legs: I have been making these for years when we can get them at a good price. They are so easy to make ...
-Keep the crab legs frozen until they are ready to go in the steamer
-For the steamer I use spring water and a good pinch of Sea Salt
-Once the steamer is steaming put the frozen crab legs in, put the lid on the steamer and set timer for 6 minutes. This does not over cook them and the meat typically pulls right out of the cracked shells
We love seafood and I worked at a seafood restaurant years ago as a bus boy but picked up some tips for cooking seafood there. I also enjoy making whole Maine lobster (have had this shipped in occasionally), sea scallops (those are the big ones, Bay scallops are the small ones), shrimp.

·3 years agoFun thread yet again @katzrul15 . As you know, I do a lot of baking and cooking. Some recipes are secret though! Here is a very versatile recipe that's a go to in our house:
Spaghetti Pie
1/2 pound spaghetti, cooked (thin or regular)
2 large eggs (1 works fine too)
15 ounces ricotta cheese
3/4 cup Parmesan or Romano cheese (optional)
1 cup marinara sauce (out of the jar is fine)
1/2 teaspoon salt
1/2 teaspoon white pepper
(I add chopped spinach, basil, oregano, chopped mushrooms, chopped onions, garlic)
1/2 cup shredded mozzarella
Grease 9" pie plate. In large bowl, beat eggs. Stir in ricotta, salt, pepper and Parmesan until blended. Add spaghetti and stir until well-coated. Put in pie plate and top with marinara. Sprinkle with mozzarella. Bake 25 minutes in 350 degree oven. Let sit 10 minutes before cutting (like a pie!).
I have substituted pesto for the marinara when I have a bumper crop of parsley and basil. I have also used alfredo and it is dreamy! You can add in so many things: spinach, basil, oregano, mushrooms, onions, garlic, ground beef, chicken. They will incorporate into the mixture just fine.

·3 years agoTotchos! Take everything you would normally dip your chips in and dump it over tater tots. Melted nacho cheese, taco meat, veggies, salsa, whatever. Guaranteed to satisfy picky kids and grumpy old people alike!

·3 years agoYeah, last year everyone was posting their dinners, comfort foods, bakes, etc. Always had me looking forward to the end of the work day and thinking about dinner. haha
Tonight was leftover stir fry and some butternut squash soup (had soup in the freezer) to round things out.
After all the snow pics on the other thread I finally made cocoa. Small cup, no marshmallows - Jack & PQ will probably disapprove.
Just finished logging new inventory. Sick of this screen, calling it quits for the night. Couple days behind on other thread, will have to catch up another day. Time to see what's streaming and chill for a while.

·3 years ago@policequilts You guys and your marshmallows! I haven't had one since I was a kid, so somebody can have my share! I'm not sure why marshmallows are needed for an already sweet drink. As a kid, I used to dip my buttered toast in my cocoa. The saltiness of the butter was perfect in the sweet drink. That's too sweet for me now and I drink black coffee or bouillon to warm up.
