Once there are bids, most of the listing is locked to edits. You can probably add more photos, but you definitely can't change the first photo.
Buyers committed to bids based on what was advertised, so you can't change it mid-auction.
You can cancel the bids then end the listing and start over, but you'll have to pay selling fees based on the current bids as a penalty. I wouldn't do that unless there's a really significant error with the original listing, like you put photos of the wrong product or you advertised the wrong brand or something like that.
