As a buyer, you can unlink your PayPal account by clicking on My eBay at the top of the page. Then, select Account and Payments, choose the PayPal account, and click Delete.
Unless something has changed, sellers do not have the ability to decline forms of tender anymore on ebay. ebay default payment options of credit cards, debit cards, PayPal, ApplePay & GooglePay are all covered by the ebay money back guarantee under seller protections. ebay as a payment processing center handles them all directly & assumes all the risk.
Sellers do have the ability to add forms of payment, in certain categories, beyond the above default options - that are not covered by the seller protections.
