Make sure you are on the correct eBay site. Your question came to the US ebay.com community so you are logged into that site. This happens when you look at a page or listing on the US site. If you created any listings while on ebay.com you will need to delete them and start over again once you are back on the correct site.
Log off, clear your cookies and cache, then log back in. Be sure you are on the Australian site ebay.com.au/

You are currently on the USA site eBay.com and so US$ and US shippers are the default.
If you want AU$ you need to list your item by starting on eBay.com.au
You can't use sell similar from a listing that is on "eBay.com". You have to just copy and paste the information you want to avoid this problem.
There isn't a way to change the current listing. You will need to make a new listing on the eBay.com.au site.
