Why is my "ship by" date so far out?

I have had several orders over the last couple weeks and noticed the "ship by" date on the orders tab was 2 weeks out.

I thought I might have mis-clicked my handling time when creating the listing but the listing shows 2 days handling time.

Is there another setting that controls this? I don't want 2 weeks to ship showing up on the buyers end or on the listing because I usually ship next day. This used to not be an issue but I wasn't selling on eBay for several months.

"Ship by" means ship no later than - not ship ON that date. Since your handling time is 2 days and that's what it says on the listing, be sure to ship within 2 days.

I'm not sure what is causing the Ship by date to be so far out - I'm not seeing that on my listings and haven't seen reports from others here on this board. Were you using Time Away? Keep a screenshot of that and watch to see if it corrects itself. If not, you can report it to eBay.
