Variations Not an Option in Selling Hub

Question

Hello,

I am running into issues creating a listing with the option to selection the type and quantity in order to simplify the listing. Reviewing some of the tips online it seems like you need to be in Buy it Now and only certain categories allow this. I was unsure which categories allow for this, so I watched a video where the individual was able to get the variation to come up. I went ahead and followed the exact same steps and was unable to replicate what he was getting. Is this only an option so certain types of eBay accounts? If not, what am I missing?

Thanks!
