To pause your account, you would go to your Account Settings and select "Time Away". Be cautious when doing this because there are two Time Away options. One allows Buyers to still purchase from you during your time away. There will be a banner on your listings stating your shipping will be delayed. If you chose that option, you would need to renew your time away every 15 days.
The other option is to stop all sales. With this option your listings would be hidden (but still there) until you return. With this option, you need to renew time away every 30 days.
In addition to selecting time away, it's a good idea to also put a time away message in case someone emails you. You do not need an eBay store to use Time Away.
