Trying to sell a plain old bird nest. Just like dozens of others that are listed. Ebay says it's a
violation of animal policy. Any advice?

In looking at the bird nest listings, almost every listing is in
Collectibles > Animals > Birds > Other Bird Collectables
and has the word Abandoned in the title along with the explanation of finding the nest last year in the description.
So I am not yet clear that bird nests are allowed, but I think they need to have the word abandoned if they are allowed.
Don't relist it now for the reason I gave before.

My major advice is not to list this item again.
The bots will be watching your account for a while and if you relist it will get pulled down.
I actually don't know if nests are against policy per se, but eBay wouldn't want people breaking the law by gathering nests while they are in use. Also feathers from migratory birds are prohibited.
