If by a temporary hold you mean have them listed but not available for sale without ending them? The time away option is all or nothing so there is no way to only put some items on time away.
There is a work around way that involves enabling the out of stock feature and setting the quantity to 0 on each listing you do not want available.
The out of stock option is designed for sellers who have listings that may sell out but they can get more stock. It keeps your listings active instead of ending them after the last item sells. It is only good for buy it now listings and is applied to all buy it now listings on your account. When the listing quantity is 0 the listing is hidden so it does not appear in search.
You can turn it on by going to your selling preferences page https://www.ebay.com/uas/selling-pref
In the multi quantity listings section toggle it on. Then go to your listings page https://www.ebay.com/sh/lst/active
One of the columns has the quantity for each listing, hover over the number and a pencil icon will appear so you can revise the quantity. Set it to 0. The listing is still active but can not be purchased. When you are ready to sell the item again change the quantity back. eBay will then index it back into search results.
If you don't want to continue to have the out of stock option turned on go back to your settings and turn it off.
