sold items continue to show as new and available
when I have sold an item and it's been paid for and I've shipped it, it still shows up on my account and I get notices how many people have viewed it hours after I have shipped and marked as shipped.
Why? It's the same item number and I only had 1 listed. If I click on item it will say I sold this item but yet it is still posted on my account as ending 29 days later.

It sounds like you enabled the "Out Of Stock" setting for your account. You can turn that off.
When the "Out of Stock" setting is enabled, eBay will NOT end your listing when the quantity gets to Zero. The listing, with its sales history, stays active. When your next shipment comes in, you can add inventory to the listing again.
This applies to ALL listings. So if you have any one-off items... for example, a used coffee mug, when that mug sells, the listing will still be there with 0 quantity. You will manually end any listings that you do not expect to restock.
When items have 0 quantity, they will be hidden from search.
When items are restocked, they will appear in search again.
To Turn OFF (or ON) the out of stock setting
1) Go here https://www.ebay.com/uas/selling-pref
2) Turn OFF (orON) the switch for "Listings stay active when you're out of stock" under the "Multi-quantity listings" section.
You can learn more on this help page:
https://www.ebay.com/help/selling/-/-/bulk-listings?id=4160#outofstock

Do you have Seller Hub? If you can end 0 qty listings in bulk this way
1) Go here: https://www.ebay.com/sh/lst/active
2) Underneath "Manage Active Listings", Choose 'Search', not 'Summary'
3) Using the Drop-down box for "All Statuses"
- Choose "Out of Stock"
4) Click the "Search" button
- Your list will now only be Items with 0 Quantity and can be ended.
