Sounds like you have the out of stock feature turned on. (This feature is for sellers who replenish their inventory and want to hold onto the listings so they can just update the quantity when the reorder comes in.)
If this is something you don't need, you can turn it off in your selling preferences here (screenshot above shows the setting turned ON):

It just started doing this a month ago
After 10 years of selling.
Didn't change anything.
