The proceeds from your sales are sent to your checking account, read about getting paid on this Help page: Getting paid for items you've sold | eBay
Buyers pay eBay and eBay pays you. Buyers have various options for making their payments and each listing shows that.
If you mean for Local Pick up sales there are options for receiving cash at pick up or other methods BUT eBay encourages Buyers to pay through them for the eBay Money Back Guarantee protection: eBay Money Back Guarantee policy

eBay changed from PayPal to Adyen in 2020. When eBay sends you a Payout they have already taken their fees out.
Since you are a potential returning Seller your funds may be placed on Hold for up to 30 days until you start selling more regularly: Payments on hold | eBay
Fees have gone up too: Selling fees | eBay
