How do I see what a particular item has sold for in the past?

Do a Search for something on the eBay home page, when the list is returned to you look on the left side of the page and scroll down to the Sold filter and check that.
The list will now populate with what has sold in the last 90 days. Prices will be green and nay with a strike through line means they sold as the result of an Offer so that actual sale price is unknown.
Another option is the eBay Product Research tool: Product Research - eBay Seller Hub
This tool can be a little touchy with keywords int he title so you might have to fiddle with that until the list is what you are looking for. This goes back to about 350 days.
