shipping to buyers
I chose my own UPS account to ship an item to a buyer. I didn't see ebay options for high value or signature required. ebay won't know I've shipped it. Is this a problem?

YES that's a problem if the buyer files a not a received refund request as signature on delivery is required to for all items that are $750 or more.
If you have not actually shipped yet then I'd see about canceling the shipping label and buying one with signature required and the added insurance. Pirateship.com is a good source for discounted UPS labels.
