Most sellers exclude Alaska and Hawaii if they are shipping exclusively by Fed Ex or UPS because the fees are really high. If you plan to only ship using USPS, there is no need to exclude Alaska or Hawaii, as they are most likely in region 8 or 9 from you, and using calculated shipping, the buyer will be paying those charges to their state.
eBay would prefer that all Sellers ship to all states in the U.S. I just checked and eBay shows you are shipping from Massachusetts. Due to the law of physics (I'm joking), you'll probably get some sales the furthest state away from you. It's just something that seems to happen.
eBay does allow Sellers to exclude locations they don't want to ship to. If you go to your Account Settings>Shipping Preferences, you can exclude Alaska and Hawaii. Those are the only states that you can exclude. Whatever you do, do not exclude P.O.Boxes. For many, many Buyers, especially in rural areas, that is the only way they can get their mail.
