I sold an item and it needs to be shipped by Monday. The buyer has requested that I ship the item 6 days later. Will I be penalized by EBAY since I will be late shipping the item?

Advise the buyer that you MUST ship within your stated handling time or you get a defect on your shipping metrics.
You can offer the buyer one of these two options... I usually only offer option #1
#1 Advise the buyer that because you have ship within your stated handling time that they will need to ask the post office to hold their mail. This is what I do when I am out of town. It's easy to set up on the post office website.
#2 Cancel the sale as buyer requested, refund the buyer, relist when they return so that can buy the item again. This can be a burden to the seller if the item is expensive due to the way that refunds work.
HOW REFUNDS WORK>>
Refunds, even for order cancellations, come out of your available funds not pending or held. If you do not have available funds then eBay charges your back up payment method for selling costs.
Have you entered your backup payment method for selling costs here: https://ppcapp.ebay.com/myppc/wallet/list Select Manage under the method you want to use then select Preferred for selling costs. I use a credit card.
Once you issue the refund and the buyers funds are released from being held or finish processing then the buyers payment is released to you.
