Buyer wants me to ship to a different address. I stated that I could only ship to address on the account. The buyer has paid. If I ship it to the correct address that is on eBay, can they cancel after I ship it?

First, you are correct, you will lose your eBay protection if you ship to a different address other then the one at the time of purchase. You are new so make sure the person messaging you is the same one who purchased. If not then it is a scam trying to get a new Seller to ship something that sold to them instead of who purchased it.
If the person who messaged IS the right Buyer tell them to request a cancellation so you can end the transaction and Relist so they can purchase after the update their account address.
If they do that you can select the reason Buyer requested on the cancellation process.
Buyers cannot cancel but Sellers can, so no worries once you have shipped.
