Selling items for pickup only
A buyer has agreed to pick up the item I have for sale today. How will I know they have paid ebay, before I let them drive away with their purchase?

The buyer can not just take their payment back. It will say processing or on hold next to the payment, see below for more info on payout holds.
When the buyer comes to pick up the item be sure to enter the code in the eBay app>
For proof of pickup you can:
use the eBay app to scan the QR code the buyer received through email
use the eBay app to manually enter the 6-digit code the buyer received through email
To scan the QR code:
Go to Selling on the eBay App.
Go to the Sold tab.
Select the Arrange Pickup banner.
Tap the Scan to confirm pickup button.
If the buyer doesn't have the QR code available, ask them for the 6-digit code they received through email and manually enter it in the app.
The code is your proof of delivery to the buyer. You need to code to help get your funds released. Since you are a new seller you are subject to fund holds>
PAYOUT HOLDS>
As a fellow seller I understand that waiting for your payout is frustrating.
Fund holds are normal for new and returning sellers.
New or infrequent sellers will experience transaction holds while learning best selling practices. This helps sellers become established and build a strong selling history on eBay. New sellers typically experience holds for up to 30 days, although sometimes it may be longer
You can see the fund holds policy on this page> https://www.ebay.com/help/selling/getting-paid/getting-paid-items-youve-sold/payments-hold?id=4816&st=
