If you are using the eBay app, tap the three-dot menu by the seller's entry on the Saved Seller screen to see the option to unsave the seller at the bottom.
Using a desktop browser, go to your Saved Seller list here:
https://www.ebay.com/mye/myebay/savedsellers
Click the blue heart icon, then refresh the page to delete the seller from the list.
