Mentor8 months agoeBay does not verify anything in the listing -- listing descriptions are provided by the seller. If the seller tells eBay that the seller has a dozen items in stock, eBay will show what the seller indicates.
As far as past sales of a listing are considered, it is possible for a seller to create a multiple quantity listing, sell a few items, then edit the same listing and sell something else entirely at an entirely different price, while still showing the history of the number past items sold at the old price.
Pick trustworthy sellers to do business with. Look at seller feedback for selling similar items, and see how far back the seller's history goes. The longer a seller has been selling items in the same category or similarly-valued items and getting positive feedback from buyers, the less likely the seller is to suddenly start delivering knock-offs or else disappear altogether. If the seller's history consists of private listings that are hidden, or if there is a large gap between past feedback comments and current sales so that you cannot see exactly what the seller has been getting feedback for selling, you should be suspicious. Likewise, if a deal is "too good to be true" or if the seller's business model makes no sense -- such as selling heavy items with free shipping where the total cost is less than shipping would be -- you should look for other sellers to do business with.

It that information is listed in the Title, Conditions section or Description then it might be suspect.
If it's on the actual listing on the right when you open the listing the number sold is from the last Quantity entered on the listing by the Seller ... screen shot example below of an item I had original had 2 of.
