The most recent version of the app has lots of issues related to search at the moment. Problems with the keyboard and cursor in particular, but also saving searches.
You can report app issues to eBay by shaking your device while the app is active.
Until eBay releases a new app version to address the current issues, try searching using a mobile browser and saving searches that way.
