In addition to what @rock.star and @comics-scifi-collectibles have provided I sell a lot Auction style and I determine my starting price the same way I would a Buy it now item. The price has to cover your cost, eBay fees, your Profit margin, expenses like packing materials and fees on paid shipping and sales tax by the customer (granted this last item is a low amount but it can add up over time).
Additionally, WHEN your auctions end is important too ... you can try setting your auctions up to end on weekends and Sundays if you can. Back in 2016 eBay posted this splash page for Sellers about the advantage of Sunday ending Auctions ... I've kept it around because it mainly holds true today.

Mentor1 year ago@petwilso-61 Always start auctions at a price you will be happy with if you get just ONE bid. The reserve price fee is charged the moment you list the item and not refundable.
Buyers do not like reserve price auctions and give up guessing how much you want. It also encourages "sport bidding" where buyers just keep bidding to see how much you really want then cancel their bids.
You can ask customer service if they will give you a one time courtesy refund of the reserve price fees. You might get lucky, it doesn't hurt to ask.

Instead of a reserve just start your auctions at your minimum price and avoid the fees.
