Requested seller to cancel my purchase.
I submitted a cancellation request before the item was shipped, but the seller generated a shipping label shortly afterward and claimed it had already been shipped. How can I go about to dispute this with eBay?

A buyer can request a cancellation, but only the seller can choose to honor it or not. eBay cannot help with this.
Check the item listing to see if the seller accepts returns. If he does, once you receive the item, you can open a return. (The Money Back Guarantee doesn't apply unless you receive an item that doesn't match the description.)
For the future, be sure you want an item before you commit to buy it.

At this point you have to wait for delivery. Obviously the Seller is not happy that you want to cancel. But that aside, you are protected by the eBay Money Back Guarantee for 30 days from receipt OR the original estimated delivery.
eBay Money Back Guarantee policy
For now, wait for delivery, eBay is not going to do anything about it.
