I purchase a product only to discover several months later that it expired two years before it was shipped. Seller refuses to replace it stating they have a 30 day return policy. The product has degraded and is unusable. Can you help?

Yeah you are out of luck with eBay (you had 30 days) and most likely your payment method also.
You should always look at your purchases when you receive them.
