Why does eBay keep changing the price of something I’m attempting to post? It is worth way more than they recommend but when I go to put a more accurate value in it reverts back to eBay’s dumb recommended price. Is there a way to override this dumb function?

It sounds like the auto fill pricing option is enabled on the listing. Look for a toggle in the pricing section of the listing page. If you do not see it displayed click/tap on the see pricing options menu to see it, Make sure it is turned off.
