Non eBay shipping --How can buyer show received?

Hello and thx in advance! I have a repeat buyer at my store, so I want to encourage that of course. Began with shipped box of items but buyer also was near me at some point recently, so we did local pickup with code that worked once. Since then, I have a few items that were bought in separate purchases from buyer, so the idea was to consolidate shipping. Either for bulk send or pickup when he is back in my area. How can the buyer show 'received' if either pickup up, or bundles outside of eBay shipping? I have since changed most sales to allow local pickup, but this does not solve the previous problem of a few collected sales that were unable to close out. What am I missing experts? When you do get regulars, how do you consolidate shipping? Refunds?

The listings must have the Local Pick-up option and the buyer must select it to receive the required code. You do not receive payment (assuming the buyer paid through eBay) until the code is entered or 30 days have passed.
