My account does not show items that I'm bidding on in watch list. Why??

Because you didn't add them to your Watch List? A listing is not automatically added to your Watch List when you place a bid on it, you must do so by using the "Add to Watch List" option in the listing. It used to be you could not add an item you had already bid on, but I think they changed that (still it's a good idea to add them before you bid).

Items you bid on will be added to your My eBay: Bids/Offers: Bidding automatically when you bid (might take a bit of time for them to show up there). But they are only there while the auction is active and so is your bid. If your bid is cancelled it disappears from there. If the auction ends with your bid still active it will be moved to either Didn't Win (down the page) or Purchase History. So I recommend adding it to your Watch List before you bid on it so it will always be there (until 90 days after the listing ends) unless eBay removes the listing for issues with the listing and/or seller.
