"I do not ship international. A buyer from China has won a listing. What to do ?"
It depends on what the delivery address is.
*
If the delivery address in the United States, eBay expects you to ship to that address.
* Edited to add: Per your post, above, you do not ship international.
But you do.

Your five most recent sold items show exactly the same list of nations. I've highlighted China in that list.
If eBay has given you a delivery address in China for your buyer, I think you may need to ship to China.
You can find this info on any listing, including your own.
To the right of the photos, you'll see a list of info about Shipping, Delivery, Returns, and Payments.
At the right end of the first line of Shipping, you'll see the words "See details", in a smaller print and underlined, indicating it is a hyperlink. Click anywhere within those two words, "See details," and an info box pops open in the middle of the screen.
In that box, the line that says "Ships to" includes all the nations to which eBay believes you will ship. If there are more than two or three nations, you may need to click the additional hyperlink, "See more", to see all of the countries to which you will ship.
eBay's listing set up includes many nations by default. You may go in to your shipping policies and delete any or all of them.
