I thought I specified my sales as U.S. only shipping. A person from AU won the auction and hasn't paid. What do I do?

If they have a US Forwarding company contracted to ship their items to them then they can complete the purchase. You are only responsible to ship to the US address or provide a return label FROM that US address. The AU Buyer has to pay to have the item shipped to them in their country. They would also have to get the item back to the forwarder in case of a return which is not likely to happen.
You can cancel instead using the reason "Problem with address" and then add that Buyer to your blocked list on this page: Buyer management | eBay
At the end of the day the choice is yours what you do. I have sold to numerous Buyers using forwarding companies and only had one with a potential issue.
