Trying to switch to a more secure email how can I get ebay to allow my more secure email address? Are they in the pocket of Google?

You can change the email address associated with your eBay account here:
https://accountsettings.ebay.com/profile
Each eBay account needs a unique email address, so if your new email is already associated with another eBay account you will need a new email address for this account.
