I went thru the auto assistant about a Local pick up. NO HELP
the buyer bought today, item paid today. I have a 1 day handling time. the buyer does not want to pick up till Saturday. Will I get dinged on this transaction for a late delivery???/

If you have local pickup as an option on the listing and, that is the option the buyer chooses at checkout, you have no worries about handling time. There is no handling time for local pickup.
Just scan the QR code when the buyer picks it up.
