The best approach is to:
-Message the Buyer and have them ask you for a cancellation so you can Relist it adding Local Pick up. You can cancel using the reason "Buyer requested" to avoid a strike on your account.
-They can then buy it with Local pickup.
-They will be given a QR code and a 6 digit code ... at the pick up they can give you either depending on whether or not you AND the Buyer use a mobile device (for the QR code). If not then get the 6-digit code from them. You then type that into the Sold item so eBay knows the transaction was completed.
-When an item is sold with shipping and completely paid for eBay has no provision to change to Local pick up AND they expect to see a shipping label printed and a tracking number uploaded to the sold item within your Handling time. Failure to do that would result in a Later shipping defect.
-You can also set up your Local pick up payment requirements (like accepting cash) although eBay encourages Buyers to purchase through them for the eBay Money Back Guarantee protection.
