Is there a way to cancel a sale after something has sold, as the seller?

Yes. Sometimes there are legit reasons for doing this.

NEVER do it for selling it for less $$ than you wanted to sell it for, even if you accidentally priced it to low. That's considered false advertising.

Steps to Cancel an Order

Go to Seller Hub and select Orders (or go to My eBay > Selling > Orders).
Locate the order you want to cancel.
Click the More actions dropdown menu next to the item and select Cancel order.
Choose the reason for cancellation from the dropdown menu.
Select Submit.

You took ebay's poor advice to start an auction with a low starting bid, didn't you? You never list a a starting bid that is lower than the minimum price you will accept, if there is only one bid. In this case it should have started at least with the face value of the coins.

You also can look up previously sold items on ebay to get an idea of their value. In this case you would have had to look up the sold listings for most of the coins by year and Mint mark. To do that look to the right of the main search button on an ebay page and click on Advanced. On the page that opens enter a title for the item, Ex: 1776-1976, 200th Anniversary quarter select the category and then check the sold item box and search.
