You should be able to remove items from your Watch List directly by checking a box and hitting the "delete" button at the top. If you are using the eBay app, you may have to use the "edit" menu or a pencil icon to see the boxes you need to check.
If that is not working, try a browser or another browser. Or try deleting the item from the item listing.
