Unfortunately, the only way I know of to restore deleted items from a Watch List is to find each item again and add it back manually.
Check your Recently Viewed page to see the last hundred items you looked at:
https://www.ebay.com/mye/myebay/rvi
Also check your Saved Searches, Saved Sellers, and Cart and Saved For Later list, as some of your items may still be seen there.
